Chinese Sliced Noodle, also known as “Dao Xiao Mian” (刀削面) in Mandarin, is a type of Chinese noodle that originates from Shanxi province in northern China. It is made by cutting thin slices of dough directly from a block using a sharp knife, hence the name “Dao Xiao” which means “knife-cut”.
The dough used for making Chinese Sliced Noodle is typically made from wheat flour, water, and salt. The dough is first kneaded until smooth and elastic, then rolled into a long, thin cylinder. The noodle maker then holds the cylinder with one hand and uses a sharp knife with the other hand to slice off thin pieces of dough into a pot of boiling water.
