Tsuta, a ramen restaurant in Tokyo that takes its name from Chef and Owner Yuki Onishi’s family crest, which means “ivy,” was founded on Chef Yuki’s belief that “ramen is a noodle dish that Japan is proud of.” Tsuta quickly gained acclaim after debuting in 2012, earning a Michelin star in 2015. The signature Shoyu Soba features a piquant black truffle sauce that you mix into the broth.
