Nurungji (누룽지) is a traditional Korean dish made from the scorched or slightly burnt rice that sticks to the bottom of the cauldron or pot after rice has been cooked. It is often referred to as “crust of overcooked rice” or “scorched rice.”
The intentional crisping or scorching of the rice creates a unique texture and flavour.
