Nixtamalization, an old Aztec technique, dates back over 3500 years and is used to make our maize chips. This corn chips’ basis, called masa, is made from locally farmed wholegrain maize that has been steeped in alkali water (lime), cleaned, and cooked. Then, the insanely hot puree is infused into the real masa, perfectly seasoned, and finished with a dash of Carolina Reaper powder for good measure!
