Onomichi Ramen is a famous regional ramen originating from Onomichi City in Hiroshima Prefecture. It is known for its clear yet deeply flavourful soy sauce broth, enhanced with chicken stock, dried sardine (niboshi) dashi and small pieces of pork back fat floating on the surface.
Unlike heavy tonkotsu ramen, Onomichi ramen offers a beautifully balanced soup that’s rich, aromatic and full of umami without being overly creamy.
